Reserve Wines

 

Reserve red wine needs a minimum aging period of 36 months, from which at least 12 months the wine is kept in oak barrels and spends the rest of the time in the bottle. It is commercialized in the forth year.

Since they have been closed for such a long period of time, reserve wines need to be decanted to separate the sediments, and aired, to lose certain acquired smells.

They pair very well with game meats, and elaborated stews. They are surprisingly good when paired with pure dark chocolate.
