Spanish Gran Reserva Wines
Depending on the rules of each regulatory council or denomination of origin(DO) grand reserve red wine needs to age at least 5 years. During those 5 years, it will age for at least 18 months in oak barrels and for 42 months in the bottle. In this phase, only the musts(wine) from exceptional vintages will arrive to the bodegas (cellars.)
Although it is not very common, in the case of white wines and rosé wines, the aging in oak barrels and in the bottle must last at least a period of 48 months, from which at least 6 months the wine must be aged in oak barrels.
Since these wines have been closed for a long period of time, they need to be decanted to separate the sediments, and aired, to lose certain acquired smells.
Grand reserve wines pair very well with grilled red meats, very elaborated stews and cured cheese.
