Cava is a sparkling wine mainly produced in Spain, more concretely in the region of Cava, located in the district of Penedés(Barcelona and Tarragona.) Currently, Rioja DO, Alava, Lerida, Gerona, Zaragoza, Badajoz, Valencia and Navarra also produce magnificent cavas.

The traditional method to make cava is the same one used to make Champagne, but adapted to the native Penedes grape varieties, and the varieties from other Spanish regions.

Those varieties are; Macabeo, that provides sweetness and aroma, Parellada, provides freshness and aroma as well, and Xarel-lo, that provides body and structure. Each one of these grapes complement each other, and play an important roll at the moment of elaboration.
