White wine is the result of the alcoholic fermentation of grape juice, from skin and seed free grapes. By removing the skin and seeds from the grapes, the transferring of natural dyes from the grape to the wine is avoided. This allows red grapes to be used to make white wines, although green grapes are most commonly used; from which, godello from the albariño variety or verdejo variety are stand outs.

The elaboration process of this wine starts with the pressing of the grapes and their must or juice extraction. This must or juice, free from suspended solid particles, is then introduced in the fermentation casks, where the alcoholic fermentation occurs. When the grapes come form humid areas, they may have a certain amount of malic acid, in that case is necessary for the malic fermentation to happen in the absence of bacteria or yeasts; this process must take place right after the alcoholic fermentation or at the same time

In any case, the end of the fermentation process is marked by the quantity of sugar in the wine, which is usually superior to two grams per litter, except in the very dry white wines. The complete fermentation process does not usually last more than fifteen days, and once finished, a period of transferring and clarification takes place to completely eliminate any solid residuals that may be in suspension. From this moment, the wine is bottled and it is ready to be consumed.
